Perfect Kale Chips

These kale chips are so easy to make it's almost crazy. And it's so nice making them yourself, as it's more intimate and you don't eat them super fast because you made them which makes them more special. Also they're better for you than the kind in a box or bag because they're fresh! :)

All you need is about 3/4 cup of sunflower seeds, whatever spices you want, some onion, garlic, lemon juice, and red bell pepper. I also used some coconut aminos, which is soy free seasoning sauce.
First blend the sunflower seeds in a small food processor until they become a creamy nut butter. Then add spices, lemon juice, aminos, and enough water that it becomes runny like a creamy dressing. Then add onion, crushed garlic, red bell pepper, sea salt, and anything else you want and blend it all together in a blender until everything is one.
Then put it into a big bowl and add pieces of kale, mixing it and covering every piece very well. Let it all marinate for as long as you want. I think I kept them in for around 20 minutes, but I'm not sure. Then when you feel like it, arrange the pieces on a non-stick sheet in a dehydrator and dry until crispy and fluffy. We dried ours overnight. And they were amazing. Haha :)

Sharing love

We've been eating about 98 % raw for the past week now. We can feel our bodies become more flexible, our reflexes enhancing, our skin detoxing in this dry air, stronger nails, increased emotional clarity and strength, and just an overall sense of love.
We've been focusing on how we can express and give our love to others, and we've been learning how we can open ourselves to receiving love from everything.

Over the weekend we went out of town to visit our grandpa and his new fiance and our uncle, his fiance, and our little cousin. The night we got there we went to a restaurant that had a vegan chef and a pretty flexible menu, so we were able to order a nice plate of veggies.  While we were waiting for the food, a few of our family members made a couple distasteful jokes about our "picky" diet and it made us feel uncomfortable and we felt we couldn't express for a little while. Sometimes it's hard for your family to understand when you only eat raw, and they see it as high maintenance, so it can sometimes be a difficult journey. But we learn so much and it's more than worth it.
When the food came we saw that the chef had prepared us each a beautiful platter of vegetables: carrots, cauliflower, fresh fennel, celery, brussels sprouts, radishes, and some nice greens, with two delicious dressings. This meal gave us so much energy and made us feel soo good! It was really inspiring to see how someone else prepared a meal of raw vegetables. And everyone at the table kept asking for tastes :)
The next day we went to a shop called the Healthy Grocer and we got a bunch of nice organic foods, which we made into a big meal for our family. Haha. We actually made way more than anybody could eat. We made curried green lentils and basmati rice and an asian sweet potato stew with a big colorful salad and citrus dressing. The curry and stew were cooked and very filling so we could not eat more than a couple bites, but everyone enjoyed them a lot.

We've started taking Isshinryu Karate classes with our best friend V. We've begun developing discipline and focus, as well physical strength and bodily awareness/balance. We've been realizing how important it is to get regular exercise no matter what you eat. Eating raw of course is helping us accelerate smoothly without much soreness the next day. We've been detoxing not only substances but "rational" thoughts and past patterns. It's been difficult and painful but it's helping us see beauty and love everywhere.
We have been volunteering at the Humane Society, where we pet cats and cuddle with them and send them love and healing energy. Life in a cage is really sad and must be lonely so we sometimes feel their emotions and come home feeling sad, sometimes even feeling oppression. It's also joyful and a blessing to be able to just be with them. And our kitties sense it too :)

I said some things about the calendar called the Dreamspell recently, calling it "Mayan astrology." I just want to clarify, the Dreamspell calendar is NOT Mayan, and it not based on sacred time. However, if you want to truly experience alignment with these spiritual energies, I truly feel that you should find out about the Tzolkin, which is the real Sacred 260 day count Calendar.
I presented mis-information blatantly, and I sincerely apologize.
Please STOP following the Dreamspell calendar if you have have been. I have been waking up to this truth over the past few months and only now do I understand that this new calendar was created soley to distract people from the truth, the sacred tzolkin calendar.

Persimmons are Delicious

At this moment I am presently experiencing my first ever truly ripe persimmon - mmmm! It is so delicious and squishy and creamy. The other day we bought a persimmon that was very hard and only a small part on the bottom was ripe, and it tasted so awful! The inside made my mouth feel very dry and left a disgusting after taste. Do not eat this fruits when they are unripe. You'll know they are perfectly ripe when they are so soft and squishy that if it was any other fruit you would think it had gone bad. But when you open these babies up the inside was orange and jelly-like. A truly raw pure dessert. For breakfast :p

On a side note, I also wanted to say that I'm very much cutting back on my cacao intake. I found out recently, or was reminded, that it contains some very harmful components including an acid that prevents the absorption of calcium and zinc. Ah :( But it's alright. I'm really let go of the whole chocolate thing.

The Woodstock Fruit Festival

I just found out yesterday about something that excites me soooo much :
A Fruit Festival! Actually it's called the Woodstock Fruit Festival. It's basically 9 days of all the fruit you want and amazing speakers and teachers and fun physical activities. It costs about 1,000 dollars, which does seem like a lot, but when you factor in how much everyone is getting from this it really is fine with me. I could go on and on about how inspired I am to save up and go to this thing, but I will simply give you the link for the website and you can watch the documentary yourself :)

Let's be more Compassionate!

Lately I've been coming to accept a few truths that I've been contemplating for quite some time. There are so many ways of perceiving this world, and we have to remember that we cannot make simply agree to something we don't consciously choose for ourselves, for our lives, for our experience. It saddens me to say but I would lying if I said I never judged someone for eating a way that I would consider unhealthy, or projecting in a way that appears detrimental, or for having their own perceived limitations, but of course I have done all those things! And was probably doing two out of three in judging those actions. Who am I to be someone's judge?
I am sincerely intending to be conscious of this habit in myself, and to let go of all habits I perceive in others. I intend to be more compassionate, loving, and honest about how I feel and how I am seeing my own reflection in the lives of others. I also feel a bit peeved about the use of the word "raw foodist". I don't want to be an anything-ist! I want to be RAWMore than in the sense of eating. RAW in my truth, in seeing myself and accepting my wholeness (and brokenness!), openly and honestly.
 I don't eat 100 % raw foods, not all the time. Sometimes I like to make delicious cooked meals with loving intention, and when they are made this way, they too are filled with light and don't make me feel heavy like some random food cooked at a careless restaurant might. I don't want to restrict myself to any way of being that someone or myself deems as "right". There's an infinite amount of ways to live a healthy, abundantly joyous life! I do consider myself a vegan, simply because I see the way people take the flesh and mother's milk and ovulation from animal's bodies as disrespectful and outright disgusting. It is not merciful, it is not justice. It is savagery, and I will never change my views on this subject.

Spicy Golden Curry and Fig Chutney

I've made my favorite raw curry ever today. The recipe is very simple, and can be adjusted according to preference and availability.


Spicy Golden Curry
For the soup you can use:
1/2 avocado
1/3 tomato
a good bit of onion
cilantro
large sun-dried tomato (the kind in olive oil)
3 garlic cloves
some shredded coconut
lime juice
olive oil
coconut aminos
curry powder 
cayenne
indian black salt
chili powder
turmeric
cardamom
ginger
I also used some pulp from juice I made that consisted of parsley, orange and cucumber. You can just use a bit of each of these if you want.
Blend it all up until it reaches a thick, creamy consistency.

 For the vegetables I used:
carrots
iceberg lettuce
dinosaur kale
tomato
parsley
cilantro
onion
chili powder
curry powder
olive oil
coconut vinegar
coconut nectar
salt

Chop all the veggies into small pieces and marinate in olive oil, vinegar, just a drop of nectar, salt and spices. Spread in dehydrator for a couple hours. Turn up the temperature for the last 30 minutes to give them a nice texture. If you don't have a dehydrator just marinating will still be delicious. Mix it all into the soup and top with sprouts and avocado slices. 



Fig and Golden-berry Chutney

I used:
4 or 5 small black mission figs
a handful of golden berries (or golden raisins)
cardamom
ginger
cinnamon
salt

Soak in a little water for a couple hours. Remove from water and process until it is a paste texture. Add the spices and salt. 
Don't throw out the water, this stuff is full of all the antioxidants from those delicious fruits. Use it in a smoothie or drink it, it's very delicious :)

Feliz el Dia de los Muertos!

Yesterday we celebrated the Day of the Dead. We invited a lot of friends, and who actually showed up was rather unexpected, but it was a really amazing party that was absolutely timeless. Here are some photos :)

We made mango salsa, regular salsa, cashew queso, mexican rice (not raw, but made with so much love that it certainly is a healing food :) , guacamole, raw spicy taco filling, and our best friend made a tomatillo gazpacho.
